Overnight Oats in Malibu

For the last 7 months, we have been on the go in our ’87 RV, Betty. While we love breaking out the single burner stove to cook up healthy meals, we always need go-to recipes that are easy and require no cooking at all. This is our honeymoon after all. From Massachusetts to Georgia to California, overnight oats are a staple for us on the road. They give us the energy we need to surf, hike, and explore our surroundings, wherever that may be. The combinations are endless so we often throw in whatever we have on hand. We were psyched when Hipcamp asked us to share this recipe with our fellow adventurers because we pretty much tell everyone we meet about them anyway!

Overnight Oats

The Ingredients

  • Old Fashioned Oats
  • Vanilla Almond Milk
  • Agave
  • Raw chia seeds
  • Raw pumpkin seeds
  • Banana
  • Strawberries
  • Blackberries

The How-to

1. Put oats in a container and pour in almond milk—a layer should fully cover the oats (they soak up more milk than you’d expect)

2. Add sliced strawberries and blackberries and stir it up

3. Cover and soak oats overnight in a cooler/fridge

*You can also let them sit for an hour before eating if you were having too

much fun to remember the night before

4. In the morning, add sliced bananas and seeds

5. Drizzle a tiny bit of agave (or honey)

And that’s about it! As mentioned above, you can make a batch the same day you want to eat overnight oats. They only need an hour at most so you can let them soak while you get your coffee or tea ready. One of our favorite morning rituals is making coffee in our french press while we plan our day and watch the waves roll in. Hope you enjoy this healthy breakfast (or snack) as much as we do. We were lucky enough to enjoy this batch while watching dolphins jump out of the ocean from our back window in Malibu. Needless to say, it was a good start to the day.

Time-saving tip: Make a big batch for a few days and change up your toppings each day.
