Ingredients
1 Cabbage (half really- cabbages are huge)
A few good carrots
Tofu
Olive oil
Burrito/tortilla wraps
Thai peanut sauce
Cilantro
Cheese (your choice and optional)
Sesame seeds (optional)
Prep (before your camping trip)
Cabbage Carrot Mix: Shred roughly half the cabbage and carrots with a food processor and mix together with sesame seeds.
Tofu: Press to dry, slice into bite size cubes, and toss with 1-2 tablespoons of olive oil. Pan fry until slightly golden/brown and then toss in a few tablespoons of the Thai peanut sauce and cook for 3-5 minutes more.
Assembly
1. Drizzle some Thai peanut sauce on the burrito wrap
2. Add tofu and cabbage carrot mix
3. Top with chopped cilantro and cheese
4. Wrap the burrito like you do.
5. For added flair- pan fry the burrito until crispy on both sides.
