Farro, Sweet Potato, Kale, and Sausage Cast Iron Recipe

This week we shared this tasty pic from Hipcamp Photographer Eileen Roche. It looked so good, we had to get the recipe. Psst…We’re creating a community-sourced cookbook! Why? Because food always tastes better when you’re camping. Always. Share your best ramen hacks, tastiest trail meals, and most resourceful car camping concoctions here. We’ll be compiling recipes over the next few months in anticipation of our cookbook launch where we’ll share what the Hipcamp community can cook up.

It’s not really a “recipe” because I just combined some stuff I pulled from my fridge, but here’s what we did:

Ingredients

  • 1-2 sweet potatoes (boiled, peeled, and cubed at home)
  • About 1 cup farro (pre-cooked at home in water and veggie stock)
  • Sausages (we bought the pre-cooked kind at the store on the way up, but if they need to be cooked, probably start with that)
  • A bit of goat cheese
  • 1 bag of kale

Instructions

1. Sauté about a half bag of kale with butter, 2 to 5 minutes

2. Add sweet potato, sauté a few moments longer

3. Add farro and sausages, cook until everything is toasty

4. Add almonds

5. Remove from heat, add goat cheese

6. Slice fresh tomatoes on top

Eileen cooked this up at Autocamp Russian River—a community-styled glamping oasis in Northern California.

Eileen Roche is a Hipcamp photographer. After taking every photography class offered at UC Davis, she spent time working for a brand strategy firm in the marketing field of San Francisco. She loved working on creative projects, but the adventure in her wanted to be behind the lens, not the desk. So, she sold everything, traveled South America for months with camera in hand, and returned to the states to attend the International Center of Photography in New York.
